A is for Asparagus
Last night I made Betty Crocker's "Zesty Roasted Chicken and Red Potatoes". It was good. I also made some asparagus with the same sauce used for the chicken and potatoes. In high school, there was a 2 or 3 month period of time when my mom made some form of asparagus every night... okay, it seemed like it at least. I enjoyed it for the first couple of weeks. However, toward the end of the asparagus era, the very thought of the vegetable made me want to vomit. I couldn't stand it for a number of years. About a month or two ago, as I browsed through the produce section of the grocery store, the asparagus was beckoning me to buy and make it. I gave in. This is the second time I've eaten it within a couple of months. I love it again! HOORAY! More important than it's tastiness, it is a very photogenic vegetable...ha:

mmm...
Joel didn't like it so much...
Yay for rediscovering old loves.

I also enjoy asparagus cut into 1.5-inch pieces and sauteed with olive oil, salt, and pepper.
Mom was probably making it all the time because it was in season - about May to the end of June.
